Where these numbers come from
The tool uses King Arthur Baking's published weights: 120 g for a cup of all-purpose flour, 113 g for a cup of whole wheat flour and 184 g for a cup of wheat berries. King Arthur's substitution guide advises swapping by volume, not weight, because whole wheat absorbs more liquid.
The extra liquid figure is 2 teaspoons per cup, which King Arthur gives for 100% whole wheat yeast dough. The tool scales it to the share you replace.
